🍗 Garlic Lemon Chicken & Rice (Kidney-Friendly) 🍗

This is a simple, comforting meal that’s low in sodium, balanced, and easy on the kidneys—perfect for busy weeknights.


Ingredients (1–2 servings)

1 boneless, skinless chicken breast (4 oz)

1 tbsp olive oil

1 tbsp fresh lemon juice

1 clove garlic, minced

½ tsp black pepper

½ tsp dried parsley

½ cup cooked white rice

½ cup steamed green beans or zucchini


Instructions

  1. Heat olive oil in a skillet over medium heat

  2. Add chicken breast and cook 5–6 minutes per side until fully cooked

  3. Add garlic, lemon juice, parsley, and black pepper during the last minute of cooking

  4. Serve over white rice with steamed vegetables on the side
